Aly Utrera makes traditional Venezuelan cachapa

These are a Venezuelan pancake made out of sweet corn and is often eaten as a street food.

CACHAPA

Cachapa is a thin sweet pancake made with fresh corn and this is one of the most traditional Venezuelan street foods.

It’s typically eaten with queso de mano – queso fresco (Venezuelan fresh cheese) and occasionally with chicharron (crispy pork belly) on the side

Here in Australia we substitute the Venezuelan cheeses for Mozzarella, burrata or feta cheese.

Ingredients

3 cobs of corn kernels (400g)

⅓ cup of milk

20g Papelon, rapadura, sugar cane or brown sugar

A pinch of salt

80g GF flour, or more if required

10g butter

Queso de mano (Queso fresco) burrata, mozzarella or feta.

Method

Add ingredients in a blender except (butter & cheese) and blend until combined.

Heat the fry pan over medium heat and melt the butter.

Add 1/2 cup of mixture in the fry pan and cook like a pancake for around 5 minutes and add the cheese. Fold in half and continue to cook for 2 minutes until both sides are golden brown.
